Blue Hubbard squash soup
This went along with the beef stew last night. I had come across a good number of BIG Blue Hubbards last week at the Conway Farmers market and could not resist including them into this weeks delivery. I had almost, but not quite, enough to go around.
Again With Kari Godsill:
1/2 of a football sized Blue Hubbard Squash or I’d say about 2 pounds of 1” cubed pieces

Groovy Beef Barley Stew
Boy this was tasty! Kari Godsill and I whipped this up for dinner just last night. To be really fair I helped her with the slicing and dicing of the veggies and grass fed beef from the Berkshires.
Ingredients:
2 ish pounds of grass fed beef stew meat
olive oil
Leeks
carrots
onions garlic
